He knows many local producers personally, follows Umbrian wine closely, and goes to Vinitaly every year to meet winemakers, discover what's new, and bring back bottles that truly deserve a place on the counter.

The stone vaults, the old counter carved from a barrel, and the wooden tables all keep the character of the place. Over the years the Enoteca has been renovated where it needed to be, without losing what makes it recognisable: an intimate room, unhurried, made for drinking well and being together.
